Last week was one of those weeks that I had to find things to do to entertain the girls. Chloe was off school with whiplash caused by a sports injury. Off school and stuck not being able to do much meant that I had a whining fourteen year old. Normally out all day and partcipating in all sorts of sports means that Chloe doesn’t often get bored. When she is at home she is usually in the garden on the trampoline or playing tennis. She cannot sit still that one. Erin is different, Erin gets very tired and I have to find activities that are not too much for her but still keep her entertained. Fridays are normally a day of rest for Erin she is always exhausted after a few days at nursery. Therefore I turned to Family Funspiration Activity Guide that has been put together by Tanith Carey and Flora Buttery. It offers 15 activities to keep children entertained. Flora Buttery asked if we would like to try out any of the activities and we opted to make the lemon cakes included in the guide. Flora Buttery sent us the required ingredients and it kept the girls happy whilst Dyl was at school. They were nice sisters though and had a chick cupcake waiting at home for him.
Firstly Erin got mixing and used Flora Buttery.
Secondly Chloe helped Erin spoon the mixture out into the cases – then came the naughty but nice cleaning the bowl.
Whilst the cakes baked in the oven and then cooled down they snuggled and relaxed watching a film. Even teenagers are not too old for Disney!
Finally it was time to decorate them and make them look like chicks before sampling their wares. This recipe included lemon curd and I haven’t used that in cupcakes before but we will be using it again. They were light and lovely. It gave the cakes a lovely zesty taste.
