Blueberry Cheesecake Swirl Brownies

This recipe combines two of my favourite things cheesecake and brownies which made it a sure-fire hit in our house! A goey rich chocolate brownie, topped with creamy homemade cheesecake is a slice of heaven on a plate for me! The blueberry and cheesecake brownies are the perfect mixture for the perfect dessert.

My favourite desserts or puddings are always cheesecake if we eat out that will be my choice when looking at the menu. The kids will generally opt for a warm chocolate brownie.

Therefore this recipe indulges all of us and was something I knew the kids would enjoy after dinner. What’s more it was a recipe that was easy enough for them to follow and make.

Since lockdown and being at home more we have got a lot more adventurous with baking. The children are forever in the kitchen whipping up treats. I’m pretty sure it is a way to get our of Maths but hey ho it keeps them busy!

Interestingly enough they are not bothered about cooking dinner, just all the treats. Chloe has a cooked a chilli once which was lovely but that is the only meal in 12 weeks that I have had cooked for me!

They started off easy with the Nutella Chocolate Twists which were a huge hit with everyone we knew. These are fab for having as a breakfast treat at the weekend or served with coffee. It is almost like being back in Costa – but so much cheaper!

They built on that success and started getting trying more complicated recipes and they difately hit the jackpot with the Blueberry cheesecake swirl brownies.

I’ll be honest the first time they made this delight, they cheated by using a shop bought brownie mix and just made the creamy cheesecake and blueberry compote. It was a first try afterall! However, they have now progressed to making the brownies too!

INGREDIENTS  

  • For the brownie mix
  • ¾ cup Wholewheat flour/All purpose flour 
  • ¼ cup Organic Alkalised Cocoa Powder 
  • 150 grams Dark chocolate 
  • 100 grams Butter 
  • ½ cup Powdered sugar
  • 2 Eggs
  • ¼ tsp Salt
  • ¼ cup Water

For the cheesecake

  • 300 grams Cream cheese 
  • ½ cup Organic sugar
  • 1 tsp Vanilla extract 
  • 1 Egg

For blueberry compote

  • 100 grams Blueberries 
  • ¼ cup Sugar

Blueberry Cheesecake Swirl Brownies

Ingredients
  

  • For the brownie mix
  • ¾ cup Wholewheat flour/All purpose flour 
  • ¼ cup Cocoa powder 
  • 150 grams Dark chocolate 
  • 100 grams Butter 
  • ½ cup Powdered sugar
  • 2 Eggs
  • ¼ tsp Salt
  • ¼ cup Water
For the cheesecake
  • 300 grams Cream cheese 
  • ½ cup Organic sugar
  • 1 tsp Vanilla extract 
  • 1 Egg
For blueberry compote
  • 100 grams Blueberries 
  • ¼ cup Sugar

Method
 

Blueberry compote
  1. Place the blueberry and the sugar into a saucepan over low heat and letit cook for about 10 minutes
  2. This mixture should start to thicken by this time
  3. Mash the blueberries roughly to thicken the compote
  4. Remove it from the heat and let it cool completely
Brownie layer
  1. Melt the butter and chocolate together in a double boiler or in a microwave.
  2. Once the chocolate is completely melted, add the cocoa powder and sugar Stir it until it is well combined
  3. Let the mixture cool down for 5 minutes and then mix in one egg at atime, whisking it in between each addition. 
  4. Add the flour next and stir it until everything is well combined
  5. Depending on the flour, the mixture at this stage can feel very thick. Add the water and mix until a smooth batter forms
  6. Reserve around 3 tbsp of the batter
  7. Pour the rest of the brownie batter into a greased and lined brownie pan and spread it smoothly. 
Cheesecake layer
  1. Place the cream cheese, sugar and vanilla extract in a bowl and mix it with an electric whisk until smooth
  2. Add the egg and give it another whisk until it is evenly mixed. 
  3. Pour the cheesecake mixture over the brownie mixture and spread it evenly
To create the swirls
  1. Take half tablespoon portions of the reserved brownie and place it randomly on top of the cheesecake layer
  2. Take one teaspoon portions of the cooked blueberry compote and place it in dollops in the remaining space on the cheesecake layer
  3. Now take a skewer and start to run it through the cheesecake layer in horizontal and vertical lines to create the swirls.
  4. Run the skewer a couple of times until you are happy with the pattern
  5. Now bake the brownie cheesecake in a preheated oven at 180 degree celciusfor around 40 minutes or until the top of the cheesecake turns slightlygolden. 
  6. Let it cook completely inside the oven
  7. Cut it into slices and enjoy!
